WHAT IS SWEET FIBERS?

Since the base of our sweetener mix always includes Stevia (or steviol glycosides, as the Swedish Food Agency prefers us to call it), which is dosed in much smaller quantities than sugar, we need to add an ingredient that is gentle on both blood sugar and the stomach. That's where fibers come in. "Soluble Gluco Fiber" and Polydextrose are two fibers we use. Even though they are derived from corn starch, they virtually have no impact on blood sugar. Polydextrose has a GI value of 1 (sugar has a GI of 70, white bread 100), so it's negligible. Gluco fiber has similar values.

All products are tested by Nick, and it has been shown that these fibers result in extremely low blood sugar spikes and are well-tolerated by the stomach. Overall, it's a win-win!

Not all fibers are the same, though. If you see IMO fiber or isomalto-oligosaccharides on a label, this fiber causes a significant blood sugar spike, despite being labeled as "sugar-free."
