SWISS ROLL WITHOUT ADDED SUGAR

A classic Swiss roll is a coffee-table favorite, often served at grandma’s. But why not try baking it yourself next time? The ingredients are ones you usually have at home, it's easy to bake, and you can flavor it however you like. This version is a healthier Swiss roll without added sugar, perfect to enjoy any day.
INGREDIENTS
Cake:
- 4 eggs
- 80 g almond flour
- 30 g Use Like Sugar
- 10 g psyllium husk
- 1 tsp baking powder
- 2 pinches vanilla powder
Chocolate Filling:
- 125 g mascarpone
- 75 g Dark chocolate
- 35 g butter
- 30 g Use Like Sugar
- Fresh berries for garnish
INSTRUCTIONS
Cake:
Preheat the oven to 175°C. Beat the eggs and Use Like Sugar with an electric mixer for a minute until fluffy. In a separate bowl, mix the dry ingredients, then fold them into the egg mixture. Place a sheet of parchment paper on a baking tray, spreading the batter into a 20x30 cm rectangle. Avoid spreading too thin; keeping it a bit thicker prevents cracking. Bake in the middle of the oven for 12-15 minutes. Once done, transfer the cake (with parchment paper) to another piece of parchment paper and let it sit for a few minutes. Gently peel off the original paper.
Chocolate Filling:
Carefully melt the butter and chocolate until smooth. An easy method is to do this in the microwave in a bowl. Once melted, stir in the mascarpone and Use Like Sugar, blending until smooth. Spread the filling evenly over the cake. If the filling is too firm to spread, warm it slightly to soften.
Assembly:
Roll the cake from one short end to the other, keeping the roll thick but not too tight. Wrap the roll in plastic wrap and let it set in the refrigerator for at least 30 minutes. When ready to serve, slice the roll, place on a serving plate, and top with fresh berries, lemon balm, and chopped chocolate.
