HEALTHY SEMLA COOKIES

Here is a recipe for creamy and tasty semolina cookies that are perfect to enjoy for Fat Tuesday. This recipe is completely without added sugar and is for those who want to enjoy good semmelcookies with a clear conscience. The semmelcookies are filled with sweet almond paste and fluffy whipped cream - delicious!
INGREDIENTS
About 7 large cookies:
- 60 grams butter
- 3 dl almond flour
- 3/4 dl Fiber Honey
- 3 tbsp coconut flour
- 2-3 tbsp Use Like Sugar
- 1 tsp cardamom
- ½ tsp baking powder
Almond paste
- 2 egg whites
- 1 ½ - 2 dl almond flour
- 1 ½ tbsp Use Like Sugar
- possibly a few drops of bitter almond flavoring
Cream filling:
- about 1 ½ dl whipped cream
- possibly 1-2 tsp Use Like Sugar
INSTRUCTIONS:
Biscuits:
Set the oven to 175 degrees. Boil butter and fiber honey so that the fiber honey dissolves and then remove from the plate. Stir in the remaining ingredients and mix well until you get a dough-like consistency. Place baking paper on a baking sheet and form balls of dough and flatten into cookies about 1 cm thick on the baking paper. Bake in the middle of the oven for about 8 minutes or until the cookies turn golden yellow. Leave to cool.
Filling:
Mix all the ingredients for the almond paste together until it becomes a firm batter. Then whisk the cream and sweetener separately with an electric whisk. Spread a layer of almond paste on the bottom of a cookie and pipe on cream (you can spread it over the paste). Press a cookie on top and there you have a finished Semla cookie!
