Recipe: Strawberry Cake

STRAWBERRY CAKE WITHOUT ADDED SUGAR

No real summer without strawberry cream cake, right? This strawberry cake with lemon base, coconut and elderflower in the cream is an incredible combo. What's even better? The cake has no added sugar and can be made gluten-free, making it suitable for everyone. 

INGREDIENTS

Cake:
  • 100 g Use Like Sugar
  • 150 g butter
  • 3 eggs 60 ml
  • heavy cream 30 ml
  • lemon juice Zest of 1 lemon
  • 2 teaspoons baking powder
  • 300 g flour (gluten-free if desired)
  • 30 g shredded coconut
Decoration:
  • 1.5 cups heavy cream
  • Strawberries
  • 2 tablespoons concentrated elderflower syrup

    INSTRUCTIONS:

    Bottom:

    Put the oven at 175 degrees. Next, grease a mold. Melt the butter and let it cool slightly. Then whisk in the eggs and Use like sugar until it becomes fluffy. Next, add the cream, butter, lemon juice and zest and stir. Mix the baking powder and flour together and then add the mixture to the rest of the batter. Pour the batter into the greased pan and bake in the oven for about 35-40 minutes. Leave to cool.

    Decoration: 

    Whip the cream until fluffy, then mix in the elderberry juice and stir. Spread the elderflower cream on the cake and cut the strawberries into smaller pieces and place on top. Ready to be enjoyed!

    Psst... this cake can also be made with two layers (double the size of the bottom and the cream) and you can put both strawberries and cream in between. Twice as good.
