SOFT GINGERBREAD WITHOUT ADDED SUGAR

A true classic to serve around Christmas is soft gingerbread. With amazing aromas of ginger, cinnamon and cloves, it spreads the scent of Christmas in every room and is irresistibly delicious. If you also want to bake a healthier version of soft gingerbread, this recipe is for you as it is completely without added sugar but is just as sweet and tasty.
INGREDIENTS
- 3 eggs
- 1 1/2 dl Use like sugar
- 2 dl Greek yogurt or quark
- 3 tbsp Fiber honey
- 6 dl oat flour
- 1 1/4 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1 tbsp ginger
- 1/2 tbsp cardamom
- 1 1/2 tsp cloves
- 1 dl frozen lingonberries
INSTRUCTIONS:
Start by setting the oven to 175 degrees on hot air.
Then grease a sugar cookie mold.
In a bowl, mix together the oat flour, bicarbonate of soda, baking powder, cinnamon, ginger, cardamom and cloves. In a separate bowl, whisk the eggs and Use Like Sugar into a porous batter. Add the Greek yogurt or quark and Fiber Honey and whisk to a smooth batter. Then add the flour mixture a little at a time, whisking continuously. Finally, stir in the frozen lingonberries. Pour the batter into the greased pan and bake in the middle of the oven for 40-45 minutes.
Tip! Use a wooden skewer to see if the cake is done. Let cool before removing the cake from the pan.
Garnish as you like, we recommend extra lingonberries.
