PASSION FRUIT CHEESECAKE WITH NO ADDED SUGAR

Isn’t it luxurious to treat your guests to a sumptuous cheesecake after dinner, with tangy notes and the exotic flavor of passion fruit? Why not make it even better by serving a cheesecake that contains no added sugar? Below is a recipe for a delicious and healthy passion fruit cheesecake.
INGREDIENTS
For the Cheesecake:
- 4 eggs
- 300 ml double cream
- 200 g Use Like Sugar
- 5-6 drops of Vanilla stevia
- 200 g Philadelphia cream cheese
- 1 pack (about 200 g) digestive biscuits
For the Topping:
- 240 ml water
- 3 tbsp Use Like Sugar
- Juice of 1/2 lime
- 2 tsp gelatin powder
- 4 passion fruits
INSTRUCTIONS
Cheesecake:
Whip 300 ml of cream until stiff. Take 4 eggs, separate the yolks from the whites, placing the yolks in one bowl and the whites in another. Mix the yolks with 200 ml of Use Like Sugar and a few drops of stevia. Blend well with a hand mixer, then add 200 grams of Philadelphia cream cheese, stirring gently until the cream cheese is fully incorporated. Add the whipped cream and stir again. Next, beat the egg whites until stiff and carefully fold them into the mixture to create a smooth batter.
In a food processor, crush one package of digestive biscuits and spread the crumbs evenly in the bottom of a springform pan. Pour the batter over the crumb base and place the cheesecake in the freezer to set, which usually takes about 6 hours.
Topping:
Boil 200 ml of water with 3 tablespoons of Use Like Sugar. Squeeze in the juice of half a lime and add 2 teaspoons of gelatin powder. Finally, scoop out the flesh of four passion fruits and add to the mixture. Let the topping cool, then place it in the fridge while the cheesecake is in the freezer. Once the cheesecake is set, pour the topping over it and return it to the freezer to firm up.
Decoration:
Decorate as desired when serving. Lime slices are a great option for a vibrant look and fresh taste!
