Recipe: Healthy Rhubarb Pie

HEALTHY RHUBARB PIE WITHOUT ADDED SUGAR

Rhubarb pie is a favorite for summer gatherings. This recipe yields a soft, chewy, and crispy rhubarb pie that contains no added sugar yet tastes just as sweet. Serve the pie with a scoop of vanilla ice cream for a guaranteed hit.

INGREDIENSER

For the Pie:

  • 150 g salted butter
  • 4-5 rhubarb stalks
  • 1 handful of frozen raspberries
  • 120 ml double cream
  • 200 g Use Like Sugar 
  • 40 ml Fibre syrup
  • 350 g rolled oats
  • 1 tsp baking powder
  • A pinch of salt
  • A pinch of vanilla powder

      DIRECTIONS

      Preheat the Oven: Preheat your oven to 175°C.

      Prepare the Pie Dish: Take a 7-inch (20 cm) pie dish and place the rhubarb and a handful of raspberries at the bottom. Sprinkle 2 tablespoons of Use Like Sugar over the fruit.

      Make the Oat Mixture: In a saucepan over medium heat, melt the butter. Then add the heavy cream, fiber syrup, and Use Like Sugar, mixing well. Let the mixture simmer for a moment.

      Combine the Dry Ingredients: Stir in the rolled oats, a pinch of salt, and vanilla powder until you have a consistent mixture.

      Assemble the Pie: Pour the oat mixture over the rhubarb and raspberries in the pie dish.

      Bake the Pie: Bake in the preheated oven for about 30 minutes, or until the oats are golden brown.

      Cool and Serve: Let the pie cool for about 5 minutes before serving. Enjoy with a scoop of Vanilla Ice Cream.
