Recipe: Eldflower Cheesecake

ELDFLOWER CHEESECAKE WITH NO ADDED SUGAR

Here is a recipe for the tastiest cheesecake of the summer with the flavor of eldflower and lemon. An incredibly good combination of the sweet cheesecake, fresh elfdlower and the acidity of lemon. This recipe is also completely without added sugar but is just as sweet and delicious. Serve with fresh strawberries.

INGREDIENTS

  • 3 eggs
  • 250 g Use like sugar
  • 5 drops of vanilla stevia drops
  • 200 g cream cheese
  • 750 ml whipped cream
  • 15 digestive biscuits (gluten-free)
  • Zest from 1/2 lemon
  • 1 dl of eldflower juice (concentrate)

    INSTRUCTIONS:

    Base:

    Start by melting the butter and crushing the digestive biscuits into small crumbs. Mix the butter with the biscuit crumbs until the mixture is smooth and firm. Then press the mixture into the bottom of a springform pan so that it is even and firmly pressed. Place the pan in the freezer to allow the base to set properly.

    Topping:

    Whisk the egg yolks together with the Use like sugar and stevia drops until the batter is light and creamy. Then add the cream cheese and stir gently until the mixture is smooth. In another bowl, whip the cream until it is just thick enough, not too stiff, and gently fold it into the batter. Whisk the egg whites to a firm foam and fold them into the batter as well. Grate the lemon zest and add the pork juice to the batter for extra flavor. Pour the finished batter onto the cold base and place the cheesecake in the freezer for at least 4 hours until set.

    Decorate with fresh strawberries and elderflowers before serving!
