INGREDIENTS
- 250 g flour (use gluten-free if preferred)
- 2 tbsp Chocolate drink
- 15 g baking powder
- 7 g baking soda 6 drops Vanilla stevia
- 150 g Milk chocolate
- 50 g Dark chocolate 3 eggs
- 200 g Use Like Sugar
- 160 ml rapeseed oil
- 300 ml milk
INSTRUCTIONS
Preheat the oven to 175°C. In a large bowl, whisk the eggs and Use Like Sugar until light and fluffy. Add the milk, rapeseed oil, and vanilla stevia drops, stirring to combine. In a separate bowl, mix together the flour, chocolate drink powder, baking powder, and baking soda. Gradually fold the dry ingredients into the wet mixture until just combined. Chop the milk and dark chocolate into small pieces and gently fold them into the batter, preserving the chunks.
Line a muffin tin with 12 paper cups and divide the batter evenly among them. Bake in the center of the oven for about 12-15 minutes, until the muffins are set but still soft.
Soft, gooey, and healthy chocolate muffins are now ready to enjoy.
