HEALTHY BLUEBERRY MUFFINS

These moist, healthy blueberry muffins without any added sugar are a treat no one can resist. They’re perfect to afternoon-coffee or a sweet snack. A tip for baking “the American way” is to keep the batter thick and bake for a shorter time to get that perfect muffin texture.

INGREDIENTS

  • 220 g flour (gluten-free if desired)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 115 g butter
  • 150 g Use Like Sugar
  • 2 eggs
  • 120 g vanilla yogurt or crème fraîche
  • 6 drops vanilla-flavored stevia
  • 50 ml milk
  • 250 g frozen blueberries

INSTRUCTIONS

In a large bowl, mix flour, baking soda, baking powder, and salt. In another bowl, beat the butter and Use Like Sugar with an electric mixer on high speed until soft and creamy. Reduce speed to medium and add eggs, one at a time. Stir in the yogurt (or crème fraîche) and vanilla stevia drops. Gradually add the dry ingredients and mix on low speed until just combined. Gently fold in the frozen blueberries.

Place 12 muffin liners in a muffin tin, filling each to the top. Bake for 5 minutes at 220°C, then reduce the temperature to 180°C and bake for another 15-20 minutes. Let the muffins cool slightly before serving.
