The best part of this recipe is that it contains no added sugar, making it a healthier option to enjoy guilt-free with your afternoon coffee. Let the scent of vanilla fill your kitchen as the cake bakes, then top it with fresh berries and a bit of chocolate before serving.
INGREDIENTS
For the Cake Base:
- 5 egg whites (from large eggs)
- 125 g almond flour
- 100 g Use Like Sugar
- 20 g arrowroot powder
- 1/2 teaspoon lemon juice
- 1/2 teaspoon vanilla powder
- A pinch of salt
For the Topping:
- 300 ml heavy cream Fresh berries
- Chopped Milk chocolate
- Peanuts 'n' fudge
- Lemon balm
INSTRUCTIONS:
Start by preheating the oven to 160°C (320°F). Whisk the egg whites and lemon juice together until foamy. Gradually add Use Like Sugar while whisking and continue until stiff peaks form. Combine all the dry ingredients and gently fold them into the egg white mixture to create a smooth batter. Line a loaf pan with parchment paper (do not grease it) and pour in the batter. Bake in the lower part of the oven until the cake is firm. Remove from the oven, invert onto a plate, and let it cool.
Whip the cream and spread it over the cooled cake. Decorate with fresh berries and pieces of Milk Chocolate and Peanuts N’ Fudge for a delightful crunch and chocolate flavor. Pairs wonderfully with vanilla.
P.S. Arrowroot powder is typically found in the spice aisle at grocery stores but can be substituted with potato starch or cornstarch.
